Cost
The cost to produce Bison is greater for several reasons. The primary reason is that it takes 24 to 30 months to grow an 1100 lb. animal as compared to 18 months for beef. The young bulls are finished with a corn diet. Bison require larger and heavier fencing and significantly more land. The Bison we get is dry aged to provide tenderness and flavor.
